Santa Claus' reindeer, sauted reindeer

Father Christmas could eat meat, Rudolf meat

In Lapland reindeer is essential for cuisine. Now, with this economical crisis, let's imagine ourselves hunting Rudolf on Christmas Eve and cooking four portions of "sauted reindeer".

– 600 grams of sliced reindeer (poronkäristysliha from the frozen food section of Finnish food stores)
– 40 grams of butter
– 2.5 dl of beer (this can be substituted by cream or water)
– 1 or 2 small onions
– 1 teaspoon of salt
– 2 tablespoons of flour
– ½ teaspoon of ground black pepper

 

PREPARATION
– Chop the onions
– Brown the reindeer meat and onions in butter (thick-bottomed pan recommended)
– Season with salt and pepper
– Add the flour, and stir it well
– Add your choice of liquid
– Cover the pot and let it simmer for about 45 minutes to an hour
– Serve the Sauted reindeer with mashed potatoes and lingonberry jam
